This cheesecake takes just minutes to make and is a definite crowd pleaser. Everywhere we take this people are always asking for the recipe. Joelle got the Dairy Best Cheesecake recipe years ago when she was judging a 4-H baking contest, it was of course the winner. This is a one of our go-to desserts, we usually have everything we need on hand to whip it up and have a great treat in no time.

About a year ago, we were approached about putting in a solar system on the farm. Since we have the big spacious sheds, we had the perfect place to put them. After checking out the details it looked like something that could possibly be a good investment over time. So we decided to bite the bullet and have it installed! After permitting and getting all the legal documents in order it took Legend Solar, from St George, about a month to get it installed and running to produce energy. (Actual installation was about a week, the rest of the time was waiting for the net meter from Rocky Mountain Power)
The first thing they did was put the rack system in place to hold the panels on the shed.
